MASH GUIDELINES:
Mash @ 66c for 60mins in 12litres liquor. Strike Temp 73c
Sparge @ 76c *Sparge until boil volume achieved
Mash thickness 3litre/kg
OTHER INGRIEDENTS:
Irish Moss 0.5 tsp 10min Boil
YEAST:
CML 'Five'. Attenuation 76-82. Flocculation: High. Ferment @ 18c
NOTES:
Ferment at 18c, then increase the temperature to 21c towards the end of the ferment.
If you don't have fermentation temperature control, ferment as close as you can to 19-21c
